Guest post - Caramel Blended Iced Coffee

Caramel Blended Iced Coffee

Makes 3-4 servings

  • 1 cup cold strong coffee
  • 1 cup milk
  • 4 cups ice
  • 4 tablespoons sugar
  • 8 tablespoons caramel sauce (recipe below)
  • Whipped cream and extra caramel sauce for the top

Mix all of the ingredients in the blender until smooth.

To make a chocolate drink use 6 tablespoons of sugar and 6 tablespoons of chocolate syrup (recipe below). Use same amounts of coffee, milk, and ice.

Caramel Sauce

  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 1 tablespoon water
  • 1/2 cup whole milk
  • 2 tablespoon butter

Combine sugar, water, and butter in a large saucepan. Cook over medium heat for around 6-10 minutes. Don't let it burn. Slowly add the milk and mix well. Keep cooking until it starts to thicken and looks like caramel. (It will thicken a bit more when it cools.)

Chocolate Sauce

  • 1/4 cup cocoa powder
  • 1/2 cup sugar
  • A tiny bit of salt (yes a tiny bit is a measurement)
  • 1/2 cup water
  • 1/2 teaspoon vanilla extract

Stir together. Boil 2-5 minutes, stirring rapidly, until sauce begins to thicken. (It will thicken more when it cools.)

Lisa has been posting pictures of these coffee drinks on Facebook and making us all drool.  Thank you for sharing the recipes - I can hardly wait to try them!
