Menu Plan Monday ~ June 6, 2011







Finally, I think life is settling back into the usual "busy" instead of "crazy busy" that we've experienced the past several weeks.  That means it's time to get back into a routine, including meals.  I love this time of year because of all the great produce that is coming into season.  We've already had some delicious sweet corn and strawberries.  I'm really looking forward to peaches, my favorite fruit.  I absolutely must use up some of my freezer stock in order to have room to freeze some of the produce soon to be at its peak.  Because of that you might notice some unusual meals in the next few weeks.  My pantry is well-stocked, too, so I'm looking forward to minimal grocery shopping.

Monday:

This was a new recipe for us and both of the guys said it was a keeper.  It sounds so simple and not unlike things I've made before.  However, the addition of brown sugar (I used organic dark brown sugar) adds a really special touch.  Instead of red pepper flakes I just seasoned with Creole seasoning.  I also added some garlic powder and cumin.  It was amazingly good!

Tuesday:
  • Out to dinner with friends.  David's 50th birthday was Sunday but he had been out of town on business and didn't get home until mid-afternoon.  He was not only exhausted but came home with a bad cold.  He stayed home today resting and dosing up on what I refer to as "voodoo meds" (a health food store concoction that really does work).  He feels a lot better so we will go out and celebrate Tuesday.
Wednesday:
  • broccoli and cauliflower soup
  • corn bread
  • fresh fruit
Thursday:
  • Friends have invited us over for dinner and drinks by their pool.
 Friday:
  • broccoli frittata
  • salad
  • fresh fruit
Saturday:
  • We are attending an afternoon wedding.  I'm not sure how much food will be served at the reception.  If it's just cake and hors d'oeuvres then will either stop somewhere for a light dinner or I'll whip up something at home.
