I'm sorry this is late. I meant to do this last night after dinner but David and I started watching old Golden Girls episodes and seven episodes later, it was almost midnight. We haven't seen it in quite awhile but it is still a really funny show. It was nice to just relax and laugh together. David had to work and didn't get home until almost 7:30 p.m. last night. We elected to stay home rather than battle crowds to watch fireworks in town.
Monday:
- chopped brisket on homemade buns
- homemade mashed potatoes
- corn on the cob
- homemade chocolate chip cookies and hot tea for dessert
Tuesday:
- macaroni and cheese with caramelized onion topping
- glazed carrots
- spinach salad with fresh strawberries
Wednesday:
- tacos with bean/corn filling
- sliced tomatoes
- tortilla chips and salsa
Thursday:
- baked beans with corn bread topping
- potato salad
- salad and/or fresh veggies from Farmers Market
I am attending and helping with a fundraising event this evening for the local homeless services organization. I recently joined the board. I need an easy meal that can be prepared early in the day.
Friday:
The fundraiser is a three-day event so I will most likely be helping again this evening. I'm planning to have enough leftovers from previous meals this week that the guys can just help themselves.
Saturday:
I'm not certain if I'll be helping with the fundraiser again this evening. If not, I think we are due for a date night. :)
