Yesterday I made a peach cobbler from some overripe peaches I had. I used a very easy recipe given to me by a friend years ago. The original recipe calls for blackberries but most any fruit will do. I just cut up the peaches in small pieces -- didn't even peel them. If "cobbler" means a pie crust-type topping to you, I should explain that this is more of a cake-type dessert. Call it what you will, it is delicious! And it makes a darn good breakfast. ;)
Blackberry Pudding/Cobbler

Ingredients:
- 2 cups sugar
- 2 cups flour
- 1/3 cup butter
- 2 cups boiling water
- 1 tsp. salt
- 2 tsp. baking powder
- 1 cup milk
- 2 cups blackberries (or any fruit)
Cream 1 cup of sugar (the other cup will be used later) and butter.
Add flour, baking powder, salt, milk and mix well.
Spread in greased 9x13 pan.
Sprinkle blackberries on top.
Pour 1 cup sugar over it.
Pour 2 cups boiling water over all.
Bake at 350 degrees for 50 minutes or until done.
*Since I made this with peaches, I also added some cinnamon to the batter. I might try replacing some of the sugar with brown sugar next time.
