Monday:
- hot dogs (I had a package of uncured, nitrate-free, all beef hot dogs in freezer and will make homemade buns.)
- macaroni salad
- baked beans (I realized just how many dried beans I have when I organized the pantry!)
Tuesday:
- lentil soup with dumplings
- apple muffins with streusel topping
Wednesday:
- oven fried catfish (catfish in freezer)
- coleslaw (I have half a head of cabbage in the fridge that I need to use.)
- hush puppies
Thursday:
I need an easy meal tonight because I have a meeting at 5:30 and we are going to see "To Kill a Mockingbird" which is showing in a local theater at 7:00 p.m.
- quesadillas
- homemade tomato bisque soup
I received the link to these burgers from my niece and they sound wonderful!
- black bean burgers with corn salad (I may serve them on homemade buns if I get some made.)
- French fries (I have part of a package of steak fries in the freezer, as well as some sweet potato fries. I'll do the steak fries for the guys and a a few sweet potato fries for me.)
Saturday:
- waffles
- eggs
- fruit smoothies
