Menu Monday ~ July 23, 2012



After the past few busy weeks I'm hopeful that this week will be a little less hectic. I don't have any meetings or trips out of town until Saturday. This is a good thing as my house certainly needs some attention.

Our menu this week utilizes what we have on hand with the exception of some fresh produce which I hope to get at the farmers market Wednesday morning. 

Monday:
I took chicken breasts from the freezer to thaw for tonight's meal. I have potatoes, okra, cabbage and peaches which all need to be used soon so this seems like a perfect meal.
  • oven-fried chicken
  • mashed potatoes and gravy
  • fried okra
  • coleslaw
  • peaches
Tuesday:
I hope to make time to make tortillas this morning before I go swimming with my daughter in the afternoon. 
  • black beans, corn, tomatoes and rice
  • flour tortillas (hopefully homemade)
  • sour cream, cheese, salsa, avocado
  • salad
Wednesday:
I still haven't found time to make homemade bread so I'm planning to do so this day and use part of the dough for breadsticks. 
  • spaghetti with meat sauce (I have some in the freezer)
  • tossed green salad
  • homemade bread sticks
Thursday:
I need a quick meal this night. I will be swimming with my daughter from 3-5 and then we have tentative plans to see "The Princess Bride" at a local theater at 7. I can make this casserole in the morning, stick it in the fridge and then heat it when I get home. 
  • casserole made from leftover spaghetti sauce, pasta, topped with cheese
  • salad
  • bread sticks
Friday:
I want to squeeze every bit of enjoyment from summer produce. Fresh corn is on its way out so I'm hoping I will still be able to find some this week. My tomato plants are producing well, though. 
  • roasted potatoes/onions/peppers
  • corn on the cob
  • sliced tomatoes
  • salad
Saturday:
We will be in the city for the weekend. It's the annual Reggae Festival and we have reservations for Saturday night at the Skirvin. I can hardly wait!
