I made it in my Bosch mixer but it would be really easy to just stir it in a very large bowl. The dough is very sticky and a little difficult to get spread out into the greased pans but I just used my (clean!) fingers to finish spreading it out. It rose easily and baked up beautifully. I might decrease the salt just a tiny bit next time but otherwise it was quite tasty.
It was very yummy just plain with our soup but as mentioned in the recipe link, it is amazing toasted and topped with butter and preserves. I toasted a piece each for David and I to enjoy with our evening cups of tea:
Toasting brings out the flavor and gives it a crunchy texture that really is reminiscent of English muffins, a favorite of mine. In fact, it looks like I have found the homemade replacement I had been looking for. David loved it, too, and asked me to make it every week. I think we have a winner!
