Caramel Blended Iced Coffee

Makes 3-4 servings
Ingredients:
- 1 cup cold strong coffee
- 1 cup milk
- 4 cups ice
- 4 tablespoons sugar
- 8 tablespoons caramel sauce (recipe below)
- Whipped cream and extra caramel sauce for the top
Directions:
Mix all of the ingredients in the blender until smooth.
Variation:
To make a chocolate drink use 6 tablespoons of sugar and 6 tablespoons of chocolate syrup (recipe below). Use same amounts of coffee, milk, and ice.
Caramel Sauce
Ingredients:
- 3/4 cup sugar
- 1/4 cup brown sugar
- 1 tablespoon water
- 1/2 cup whole milk
- 2 tablespoon butter
Directions:
Combine sugar, water, and butter in a large saucepan. Cook over medium heat for around 6-10 minutes. Don't let it burn. Slowly add the milk and mix well. Keep cooking until it starts to thicken and looks like caramel. (It will thicken a bit more when it cools.)
Chocolate Sauce
Ingredients:
- 1/4 cup cocoa powder
- 1/2 cup sugar
- A tiny bit of salt (yes a tiny bit is a measurement)
- 1/2 cup water
- 1/2 teaspoon vanilla extract
Directions:
Stir together. Boil 2-5 minutes, stirring rapidly, until sauce begins to thicken. (It will thicken more when it cools.)
