Menu Plan Monday ~ May 9, 2011


Monday:
  • baked potatoes
  • corn on the cob
  • tossed green salad with tomatoes and red bell peppers
Our little local organic bakery got in a shipment of organic produce this afternoon so I bought corn, tomatoes, strawberries, sweet peppers, apples, pears, baby spinach, spring mix greens, broccoli and sweet potatoes.  That fresh corn on the cob was a welcome taste of summer!

Tuesday:

I'm signed up to bring a casserole to Compassion Outreach, a local organization that provides free medical care and a meal twice a month to those in need.  This is our church's turn to provide the meal.  I have a HUGE disposable pan to fill so I figure that a rice-based dish will be relatively economical for me.  I had a couple of smoked sausages in the freezer as well as bell peppers, onion and celery on hand.  I'll make up a jambalaya-type casserole to take.  As soon as I get through serving, I'm going to meet David and the new employees he's training this week at a restaurant for dinner.
 
Wednesday:
  • broccoli casserole
  • glazed carrots
  • steamed brown rice
  • salad
I'm bringing food to a friend who is undergoing chemo.  She's not feeling great right now and prefers no meat. The broccoli casserole is a new-to-me recipe that includes eggs and cottage cheese for protein.  Since she's eating smaller, more frequent meals right now, I figure these items are easily reheated.  I'm also going to pick up some organic apples and pears for her to have on hand for snacks.  

Thursday:
  • David will be out of town so I'll either eat leftovers or make a salad.
Friday:
  • tuna salad stuffed tomatoes
  • corn on the cob
  • cheddar biscuits
  • banana pudding
Saturday:
  • pasta with sweet peppers in a Creole cream sauce
  • salad
  • bread or leftover cheddar biscuits (if there are any!)
