Making soup

Yesterday I made a big pot of soup for a grieving family. I decided to take a few photos of the process to share here. This isn't a recipe, per se, but more of a general method. Feel free to substitute your favorite ingredients. I haven't been to the store since our return from New Orleans on Monday (except to the dairy store for milk and lettuce) so I made this from what I had on hand.

Ingredients:
  • carrots
  • potatoes
  • green beans (frozen organic)
  • corn (frozen organic)
  • peas (frozen organic)
  • bell pepper (frozen)
  • onions
  • garlic
  • smoked sausage
  • red wine
  • chicken broth
  • worchestershire sauce
  • Pick-a-peppa sauce
  • salt, pepper, Creole seasoning, basil
  • olive oil



Making a big pot of soup for friends who recently lost a loved one

Virtually every vegetable-based soup I make starts with the cooking of chopped onions in a little olive oil (or sometimes butter):

Next I added some garlic, cut up smoked sausage and various seasonings:

I then added a splash of red wine and divided the ingredients into two stock pans (while I was at it I made a smaller pot of soup for our dinner):

Transfer to stockpots (making some for our dinner tonight, too), add a little wine and chicken broth. Then fill pots with water.

I added a carton of organic chicken broth and then finished filling the pans with water. Then came the sliced carrots, diced potatoes, and all the frozen veggies:

Add carrots, potatoes, corn, green beans, peas and crushed tomatoes then simmer until everything is tender. Taste and adjust seasonings.

I failed to take a photo of the finished product but after simmering for about an hour I had two pots of rich and tasty soup. I happened to have a loaf of my homemade bread in the freezer so I thawed that and took it along with the soup to our friends. Turns out I made a good choice as they had lots of people to feed and plenty of desserts already. 

I had leftover garlic bread from the night before so all I had to do was stick it in the oven for a few minutes to reheat and our dinner was done.
