The Best Brownies - EVER!

I've had requests to share this recipe (begging, actually) so despite the fact I don't have a picture, here it is. These brownies are rich, moist and utterly decadent. I promise that if you make them you'll never buy another brownie mix.

adapted from "Just Winging It"

Ingredients:
  • 2 sticks real butter (recipe calls for unsalted but I never have that on hand and use salted)
  • 1 cup semi-sweet chocolate chips (I use organic.)
  • 4 eggs
  • 1 cup sugar
  • 1 cup packed brown sugar (I recommend organic dark brown sugar.)
  • 2 t. vanilla extract
  • 1/2 t. salt
  • 1 cup flour
Heat oven to 350 degrees. Grease a 9x13 baking dish very well with butter. Using a double boiler or two saucepans stacked (about an inch of water in the bottom pan), melt the butter and chocolate chips, stirring until smooth. Remove from heat. 

Whisk eggs in large mixing bowl. Add sugar, brown sugar, vanilla and salt. Mix well. Stir in chocolate mixture the fold in flour. Fold gently until well-mixed but don't overmix. Pour into prepared pan, spread evenly and bake for 28-32 minutes. I like my brownies gooey and slightly undercooked so 28 minutes works for me and my oven. If you like yours more done bake until a toothpick inserted in the middle comes out clean.
